Why can't we edit our posts? I've noticed that some people can, but I can't or am I wrong and the button is just hidden?

New members cant. You have to wait til you've got a certain amount of posts, like 50 or 30 or something. Or if you have more than 10 you can send a mod a message and they can give you early promotion from the New Members group to regular Members.
